Vintner's Comment:

Our Spumante Secco is a sparkling wine that is made in a traditional Italian method which is called the CharmatMethodSpumante means sparkling Italian wine andsecco simply means dry in Italian.  The re-fermentation process happens in a pressurized tank, instead of in a bottle, and then the wine is bottled in an isobaric machine to preserve the carbonation. Although not all the time, it doesn't happen every year, more like every so often, depending on my annual yields, I mix it with our Vidal Blanc and even with Muscato Canelli, and then we ferment it.  Spumante is in essence a champagne, and it is classified by many different levels of sweetness:

  • doux (sweetest)
  • sec
  • demi sec
  • brute
  • brute nature (with no added sugars), and
  • extra brute (the driest, very, very rare, I've never myself drunk an extra brute spumante) 

This is my favorite white wine. I guess I simply prefer drinking my white wines sparkling, except maybe for a good Sauvignon Blanc or Vidal Blanc. To cook, there's Risotto Allo Spumante, where you make risotto using Spumante or champagne, and I really like to do that with risotto for a lighter dish. I also like our Spumante a lot as an aperitif, and in Italy it's typical to have a bottle of Spumante before dinner to whet the palate before a heavier meal. And of course, its a celebratory type of drink. Ideal for New Years Eve, holiday parities, graduations, anniversaries, weddings...even after winning a car race!
